- Supervise the function of all stewarding department colleagues
- Initiates and schedules preventive maintenance work and coordinate process with Engineering.
- Ensures that all kitchen areas are clean and maintained up to required sanitation and hygiene standard.
- Minimize cost through breakage control, loss prevention and economical supplies and chemical use.
- Ensure that dishwashing machine, pot washing area and kitchen areas are clean and maintained in accordance with the sanitation and hygiene standard.
- Assists the Chief Steward in the all inventory processes.
- Assist the Chief Steward with training requirements for the department.
- Ensure that all members of the department demonstrate the required standard of service.
- In the absence of the Chief Steward, attend the meetings in the Chefs office, take down notes for important issues, and communicates with all the stewarding colleagues.
- In the absence of the chief Steward brings up important issues in the chefs meeting and communicates to the executive chef with regards to stewarding operations.
- Check the buffet set up and mise en place and ensure everything are in order.
- Prepare purchase request in the absence of Chief steward
- Must have a minimum of 2 years' experience as Shift leader stewarding or similar position.
- High School certificate or equivalent and any other related qualifications
- Ability to work well under pressure and in a multi-cultural environment
- Basic Food hygiene Training Certification.
- Computer Skill is a plus
- Ability to communicate in English
