- Inspect incoming deliveries of meat and fish for quality and quantity compliance.
- Prepare and cut meat and fish products following standard recipes and portion control guidelines.
- Maintain cleanliness and hygiene of meat and fish preparation areas, including proper storage in refrigerators and freezers.
- Collaborate closely with the Executive Chef and Sous Chef to ensure timely preparation and availability of meat products.
- Operate and maintain butcher equipment and machinery safely and efficiently.
- Follow all safety and sanitation regulations and participate in area inspections.
- Minimum of 3 years experience as a butcher in hotels, restaurants, or cruise ships.
- Proficiency in preparing various meat and fish products to specified company standards.
- Culinary diploma or equivalent
- Knowledge of quality control, portion control, and proper storage techniques.
- Strong communication skills and ability to work collaboratively within a kitchen team.
- Good understanding of hygiene and safety standards in food preparation.
