- Receive and inspect meat and fish deliveries for quality and quantity compliance.
- Prepare all meat and fish products as per company specifications and standards.
- Maintain cleanliness and hygiene in meat and fish preparation areas, including proper storage in refrigerators and freezers.
- Collaborate closely with the Executive Chef, Sous Chef, and Food & Beverage Manager to coordinate orders and preparation.
- Operate and maintain cutting equipment and tools responsibly, reporting any maintenance issues promptly.
- Ensure compliance with health, safety, and food hygiene regulations.
- Follow portion control and production procedures outlined in company policies.
- Participate in sanitation inspections of the preparation areas.
- Minimum 3 years' experience as a butcher in hotels, high-end restaurants, or cruise ships.
- Ability to prepare various cuts of meat and fish to company standards.
- Culinary Diploma or equivalent.
- Strong knowledge of quality control, production processes, and proper storage techniques.
- Excellent communication skills and ability to work closely with kitchen and F&B management teams.
- Understanding of health and safety regulations and hygiene standards.
- Ability to work efficiently in a fast-paced environment.
